Don’t you just love summer food? Here is a quick, cooling salad filled with healthy fats that you can fix quickly and often.
A nice alternative to guacamole.
2 tbs fresh squeezed lime or lemon juice
1 small Vidalia onion or yellow Spanish onion.
2 tbs olive oil
3 tbs rice vinegar
1/2 tsp Himalayan pink salt
1/4/ tsp white pepper
Skin the avocados halve them lengthwise and spoon out entire halves.
Cut into half inch pieces. Place in large salad bowl. Coat evenly with lime or lemon juice.
Cut tomatoes into half inch pieces and place in the salad bowl.
Cut the small onion into the same sized pieces as the avocado and the tomato and place in the bowl.
Add the olive oil, the rice vinegar, the pink salt and white pepper and toss.
If you like you can add half inch cubes of a good pastured cheddar cheese for a dairy component.
This is my go to take along dish for summer gatherings and it always gets rave reviews.
I sometimes add fresh basil and parsley from my garden. It is a good versatile salad to build on with the addition of shrimp over a bed of crisp lettuce.
Make it a dinner salad. Yum.
